07 HD w 53k miles for $8k is too much money IMHO.
Just for HA HA's I watch used HD sales/prices etc and even 2 yr newer 09 FLHTCU's in good cond with only 25-30miles on them arent selling @ $8-8,500 .
So $8k for a 2 yr older 07 HD with 53k/2x more miles is way too much money IMHO & even if the bike was in great cond with records i would not pay more then $6k maybe 6,500 max if i just had to have it.
Id look for an 09 HD that has newer frame design with larger rear wheel & tire along with a few other improvements for 09 too.

I can't speak to "value", since the used bike market is very, very bad now. But I just gave my 07 Road King with 50K miles to a good friend, and the bike is virtually indistinguishable from the day I bought it in 2007. However, I am the only one who ever touched it for maintenance and repairs (of which there have been very few). It does not use any more oil than it did new (as with most of these bikes, running them hard will push some oil into the air filter). Also, my bike was completely stock so far as drivetrain goes.
I happen to like the "look" of the old frame and its wheels; it's narrower and more "conventional" looking. Yes, my new 2017 Road King is better in every measurable way, but the 07 is lighter, handles well, and is more visceral in the way it runs and feels.
Certainly a properly maintained 07 King will go another 50K miles.

A friend of mine has over 230,000 on his motor without a rebuild!, If they are properly taken care of these engines last. Check the maintenance records, if properly serviced engine should be fine
