You may as well go up to Estes Park. Yes, it's very touristy, but it's also just darn pretty. Go up Bear Lake road there while your at it. Same with simply running up 34 beyond Estes.
As for more local, either road up along side Horsetooth, and then just follow your map with regards to twisties. It's all darn scenic up there. I'd probably head on up to Red Feather myself.
Don't totally dismiss riding north and east. A lot of those country roads are scenic too, if dead straight. Especially out into the grasslands park area.

There are so many great roads in Colorado that I have not been able to hit them all in the 12 years I have lived here. If you got time, try the Walden Loop.
Take 14 west to Walden, take 125 south to Granby, then take 34 thru the Rocky Mountain National Park which should drop into Estes Park, then back to Loveland. Then north back to Fort Collins

+1 - this really is a beautiful ride. You'll be hitting higher elevations, so plan for cooler temperatures as well. It won't feel that way when you first start out...
Also, check with RMNP to make sure Trail Ridge Road is open. Opening weekend it typically Memorial Day weekend. I believe the snow has been less up there this year, but the drifts have still been pretty large. Last I saw, they were still on schedule.

Yea, Trail Ridge Road isn't open yet.
OP, Here's the park services page regarding roads in Rocky Mountain National Park:
https://www.nps.gov/romo/planyourvisit/road_status.htm
Here's a good quick page on scenic travels through Colorado, even coming over from Nebraska. https://www.codot.gov/travel/scenic-byways
Do not underestimate the intensity of the sun, and how cold it can qet when you're out of the sun up in those mountains.
Oh, and bring a few extra memory cards for your camera. You're going to have a blast.
