You're going to get lots of replies about cam choices and opinions on them as well.
For the record cord both are mid range cams with the 204 being better in the upper range of the spectrum. Also the 204 has a nice lumpy idle to it in comparison to the other SE cams.
I personally run 211s in my 14 heritage and like the sounds of them but they are real soft at anything below 2800 rpm.
Best thing to to do is evaluate how you ride and choose a cam based on that. There are cams for just about everything from mild to wild builds and the best cam will be the one that compliments your riding style.
As as you asked specifically about an Ultra I would suggest the SE 255 for low end grunt and freeway riding especially if riding 2 up. If you're more into hot roding and see north of 4000 rpm on a consistent basis then the 204 would be my choice for SE cams.
If if I were to do it over on my bike I would get the 570 or 585 from s&s and bump up the compression to 10.5 with some head work. Reason for this is with the higher compression you gain back some of the low end torque you lose with a high overlap cam.
To reiterate. Evaluate your riding style and choose the cam that best matches that or you will be disappointed in the results.

Well, seeing as you asked which one would be better in a heavy bike like an Ultra, and you didn't mention any other mods.
My answer would be that the 203's would be better.
I had 203's in my RK and they were a good all round cam.
