on your sporty project do it low buck homebuilt the way they were way back. no powder coat funky home done paint job used parts see how little you can spend
Personally I would do it dirt style with knobby tires, raised suspension and exhaust and fenders. then you can explore those dirt roads you ride by on the bagger.

sporty, look at magazines and see what you like.
the 39mm front end will benefit from a fork brace- the SE was made by telefix and is great but the chrome is likely to flake off. I had mine polished.
the front end is the same as the fxr and dynas- there is a dual disk kit available which is what came on my fxrp- very nice
a swap to a later ( 1990+) keihin CV carb ( with accelerator pump) is an easy swap and will give a few more ponies
