so if I am understanding correctly I csn simply take a 21x3.5 wheel for an 00 to 07 model with the 1" I.D. bearings and swap them for the 25mm I.D. bearings and I'm good to go?

Get yourself a wheel that is made to fit a 2012 RK. The one you have selected says that it fits 2000+ Wide Glide. IMHO, the front wheel plays an important role in safety.

That Dual Disc wheel should be for a "Touring" model wide-glide frontend not a single disc Dyna "Wide Glide" model (also not for any softail wide-glide frontends)...

You're almost done...You also need a 08-later center spacer sleeve and (1) bearing Shim (used on the LEFT-side) to go behind the thinner 25mm Id x 15mm wide bearing.

Those parts come in the Wheel Installation Kits:

41455-08C WITHOUT ABS (08-later Touring)
41454-08B WITH ......ABS (08-later Touring)

You can buy those two parts separately as well and then get another brand of bearings if desired. Let me know if you need the individual part #'s
