I can usually tell right away if I like a bike just by sitting on it. However, a long test ride is the ultimate way to evaluate a bike. Don't just take it out on the open road either. Take it though a lot of parking lots for low speed testing. Be very critical in your testing and don't settle for something that you are not absolutely happy with.
