Haven't been eatin a whole lot since that bout with the flu bug....
Salmon and sprouts sounds wunnerful. Salmon and most things sound wunnerful. Salmon and bacon are food ****. Did I mention I think salmon is wunnerful?
Mebbe I just haven't figured out a good way to cook it, but kale doesn't thrill me. Purty in the garden, though. Collards... dang it, can't find my collard pics. Had a row about 20ft long anyway, ate a bunch, put em in chili, lasagna, soups, and froze a bunch. Supposed to be a real healthy food, too. Had just as much or more swiss chard, but it gets some kind of blight, lose about 90% of it.

Regarding fresh veggies; I only buy fresh. I run to the store twice a week, at least. Hey, that's why I put the bags on the Dyna!
Kale or collard greens:
Cut three or four slices of thick bacon into small strips, render down, strain out the pieces and set aside.
Add sliced white onions and garlic, salt and pepper, and saute until onions are soft.
Add coarse chopped fresh kale and a cup or two of chicken stock. Bullion works just fine, that's what I use.
Secret ingredient: toss in some Craisins (dried, sweetened cranberries). The cranberries add a sweetness to the sweet/savory flavors of the bacon, onions and garlic.
Simmer slowly until the kale is tender, plate and top with the bacon bits.
I guarantee, this will change your opinion of kale forever.

Speaking of which, I do like to leave a bit of texture to the kale. I never cook it to the point of too soft. 'sposetabe fresh, dontcha know.
Ham is awesome. The problem with ham and bacon is the nitrates, nitrites, and other preservatives. I just found this: (Haven't tried it yet, y'all will be the first to know!)
