I use whatever is handy usually sand paper. I have all the stones, s paper works just as good on stainless and is handy.

Seen a chef at the kitchen in my school use the bottom of a ceramic bowl, just ran the blade along the bottom of the bowl.

I start with a 2 sided stone in my high dollor kitchen knife and hone with 1 of 2 rods I have. My cheep knives that I like I use a carbide vee and finish with a one sided carbide edge.

Spyderco sharpmaker is what I use, I love it... I can shave with my knife after sharpening it, not that I actually shave with it...
