When I was an undergrad in Seattle 15+ yrs ago, I remember taking a class in which the professor told us how to buy real, traditional lutefisk (illegal to sell in its true form in Washington).
We had to go to Ballard, the big Scandanavian neighborhood in Seattle. Go to this Swedish/Norwegian bakery off the "Brickyard" (the central intersection) and when the gentleman asked what you wanted, you had to say 'The best you've got, and please don't lie [lye] to me.' And you had to wink. If he winked back, you left, and met someone behind the bakery in 5 minutes. You then nervously swapped a pair of sawbucks for a wad of butcher paper with your homemade lutefisk and then left.
I kid you not.
The hardest part was keeping a straight face.
And, yeah, it was rancid and kind of just fell apart in your mouth. It was real light and airy, but hit your senses like bottled low tide.
It did open your eyes nice and wide!

Sounds like a middle school gym locker room + fish. I think I'll stick to good ol' southern fried catfish.
