My favorite was an '81 XT-250, the year Yamaha switched to 4 strokes in that class. Plenty of power for off road, loved the handling, not the gas mileage, my sportster could do better. Had to do some carb work, too, Yamaha got the factory mix too lean, tended to stall at stop lights and no electric start. Ran perfect after I took the carb off and broke some emission laws. Dealers didn't have any carb parts for it, not even jets, had to tweak what it came with.

I make mine a little on the thin side, 'cause it thickens after refrigeration. Put her half in a pot, simmer while slowly adding a little plain mashed potato mix till it gets thick enough for her, doesn't change the taste. Have to add that stuff slowly, little at a time because it takes a few minutes to thicken up.
