Must be a midwest thing. I worked on a slaughterhouse kill floor and saw what it took to clean all the grass chit out of that honeycombed tripe lining then again? I only ever ate boiled chitlins once in my life. Headcheese is a different animal! LOL!

Now that I don't mind so much. Spiced and sliced right with some dark mustard and it's not far off from pastrami but I'll take a hard pass on kidney stew as well! LOL!
