Stan, very impressed with the switch to olive oil as a binder while using salt and pepper only. Made a very nice, crisp bark with good flavour. The meat was absolutely tender and filled with juices. I think I might have been a little aggressive in trimming as I think I lost some flavour. Could have been the meat too. All in all, I’ll give it a solid 8.
I saw Tim’s Provincial Leader called to truck convoys illegal and said they should stop immediately. We don’t get much news down here about their issues, Lord knows we have enough of our own but I thought Tim’s province was OK?
