People burn spruce, poplar and birch up here. Spruce being the dirtiest while birch being the cleanest.
I have a pot belly stove so they have to be 16" and about 5" in diameter. A regular fireplace wood be easier to feed.

On the Forty creek now. Supper is tomorrow at 6pm. I’ll probably put it on tonight at 8pm. Then brisket-sit…hoping the stall doesn’t happen in the middle of the night lol.
Get it close to 140° and wrap it in a brown paper bag or pink paper and go to bed.

Trying the pink paper this time. Usually used aluminum foil before.
Usually happens to me at 140-145°. Aluminum foil will make your bark soft and smoke can’t get through it for flavour if you use foil.

Yup. Definitely looking forward trying it with paper. The Texas Crutch works, but like you said, soft bark.
