It is most unfortunate I won't be able to join in the festivities in Texas with you folks.
But it lessens the chance of someone being left behind....

Don't know about you but I love finishing steaks with butter in a skillet.

That sounds good! Fajitas one night in the skillet? We have to eat at the Holland hotel one night. They have great food.
