Still not there yet Greg, 8 hours of smoke and it is sitting at 158°. It will be ready soon. I double checked the on-board temperature probes with a regular meat thermometer.

Evenin, Woods. I finally got to watch the original John Wick movie. The guy brings body count to a level of achievement Pol Pot would envy.
