Hey, Stan.

 

Stan, I have reached the target temperature in both the flat and the fatty part. Giving it 7 more minutes before I pull it and stick it in the cooler to rest for an hour. This was a “prime” brisket where the flat was pretty thick and only 4 degrees separates the two temp probes. I will post up some pictures when it is done resting and I unwrap it. It has been a long smoke, nearly 23 hours. Good thing I didn’t run out of beer!

 

Hope she can make the trip, Bob. Sherri will head up the enchilada and relleno dinner, obviously while I continue to refine my drinking skills.

 

MMMMMMmmmmmmm. White Farm Boy might learn something about good food.
