The burnt pork belly ends turned out pretty good. Would definitely do it again, but would put the bites back on a cooling grate to tighten them up compared to leaving them in the dish.

Mornin, Doc. Having a Monday every week is a good thing. All our calendars already have it printed that way, I would hate to be forced to trash 'em.
