Evenin' Mark. I cook up a batch of taco meat, hamburger, chicken, whatever, and keep that and refried beans kinda mashed up in rubbermaid tubs in the fridge. Spoon that on a tostada shell, toss on some shredded Mex 4 cheese, microwave and ready to eat in 5 minutes or less. Usually a few times a week. Goes good with a cup outta my gallon of chili, till I finish that off. I put finely diced hot peppers and cut up tomatoes in the taco meat mix, lotta tomato when I can pick it in the garden. Occasionally avocado, I could go through 10 bucks of avocado a week if I didn't mind the cost. Too bad I can't raise those here. Have a friend that grows them in Belize, can eat all he wants. Envy...
