I've been making Papa Rellena's since I was introduced to em back in the '90's. But this stuffing I have to give credit to Cowboy Kent Rollins. He lives about 15 miles from me. Kinda legendary in these parts. He has an 1876 Chuck Wagon and cooks on ranches. He's kinda famous since he beat Bobby Flay in a Chuck Wagon chicken fried steak cook off. This video gave me the idea on the stuffing...
