Dan, a good steak like a ribeye NEVER needs a heavy dressing to be marinated in as far as I'm concerned. I sometimes, but not very often sprinkle some Worcestershire Sauce on, but most times I use a simple Fajita seasoning that I get from a Mexican Supermarket here, along with a bit of garlic salt, and that is about it.
My fajitas I make out of flank steak that I soak in a mixture of Lime and Lemon juice overnight, with minced garlic rubbed in, then some simple seasoning and onto the hot fire!! I still use that disc cooker, made from a plow disc!!
