I did buy the punch down jacks, which are neat and had an easy learning curve for me on my first time. The patch panel I bought (of course) also has punch downs which made that 10 times easier then making cables with RJ45's on them.
My ISP is nowhere near gigabit, so cat5e works just dandy. That is fast enough to stream an HD movie, which is good for anyone watching The Mack (your homework during recovery, Russ) or anything else on my server.
Next project is to rebulld my media server next weekend with more drives in a new configuration to provide data redundancy.

I ended up buying my own 500 ft roll of cat 5e since that cat 6 my buddy gave me to use was giving me fits. It was too brittle and the pairs would break when you untwisted them or moved them out of the way to cut the plastic separator in the middle of the cable.
