Thanks for the info! Hitting the stealership again tomorrow. I took the carb off the bike to check the jets and did a rebuild. Gonna pick up those new jets tomorrow and get it back together. Also replacing intake manifold seals/gaskets for good measure. Hopefully that solves the problem because after that I haven't a clue what the issue could be lol. Will report back....
And as a side note seeing as how I've always had to use choke since having the bike, once I get it idleing properly on a cold start how long should you need to use the choke generally before pushing it in? I live in Florida

Score! Me +1, Bike 0 for now but I still got more stuff to work on haha. Put everything back together with a 45 pilot and a 170 main and she finally idles with no choke or throttle when hot. It was a little warm from running a minute or two but I shut it off and it fired up like a brand new bike with no choke or throttle. Very pleased! You're right about trying to find the sweet spot...dont quite have it dialed in yet but at least it runs without dying out.
Played with the idle screw and A/F mix and adjusted it right above the point it started to sputter but still seems to be idleing a tad high. Is this where I want it? Could just be me or how the exhaust sounds not sure...
