Since it's only been 1,000 miles since the upgrade, I'd bet the oil level was low. It's normal for a motor to use some oil during break-in.

Note: the oil light is not an oil level indicator, it indicates Loss of Oil Flow.

It doesn't even come on when it's dangerously low? That's good information to know, thanks! First bike, so still learning the ins and outs of this, as this is the first service I've done on my bike myself.

I'm hoping I didn't hurt anything in the process of not having checked the oil for this 1,000 miles if I've been running the bike with the oil level being low.
