When I put my pipes on, my bike had 18 miles on it so I didn't change the gaskets. Also, you can either unplug the o2 sensors from the harness, or just unscrew them from the installed pipes once they're loose from the brackets and cans.
You'll need to have a buddy hold the pipe for you (unless you want "battle scars" in your powdercoat and paint), but odds are someone will want to hang out anyway to hear you fire that thing up for the first time anyway.
Just remember, if you leave the o2 sensors plugged in, make sure you PRE-TWIST the wiring for them before you reinstall them so the wires aren't twisted up when you have them installed. Use anti-seize on the threads for them going back in, and mind the tips of those things (they're on the fragile side).

Because I'm not into wiring, I'm into riding. It was faster and easier for ME to leave them plugged in to the harness. Worked fine, got the same result.
