Took my bike (1997 XL1200C) for about an hour ride yesterday and my Dakota Digital Speedo started flashing "Low Oil". It does it no matter what RPM I'm at and pretty much just stays on. The oil level is right at "Full" and I had an oil change only about 500 miles ago. From what I've read this problem could either be the sending unit or maybe a wiring problem?
Yep, sending units are common failure items and the first thing you need to check. Replace it with an aftermarket unit like one from Accel. It's only about a $15.00 item.

easy check / remove the wire from the sender and the light goes out, ground the wire to the frame and the light goes on. that eliminates the wiring pretty reliably so change the pressure sensor after the check.
