I put a HD sundowner seat on last fall ( price was too good to turn down). It's ugly, but I'm surprised at how comfortable it actually is. Wife likes it a whole bunch and I can do a lot more miles on it than the stock seat.
So......... I save the $700 + a Mustang set up would have cost me ( in Canada), buy some other stuff I don't really need for the bike and call it good for now

Yes, the side kick (and a side kick custom in particular) I think is the best compromise for N.
A H.D. Stripper (the seats name) is also an option, yet lacks so called Nightster comfort IMHO.
The N is a real town bike, not a tourer, what about a Phantom stick on pillion for 2 up 2 miles at a time.
Else, lose the N look and set up for 2 up w/ Mustang and longer shocks.
