I've used a lot of different carb's over the years (including the Super E's), but probably the best carb out there is the Mikuni HSR Series....
I'd recommend a HSR-42 pumper. Excellent performance, and easy to dial in (all adjustments can be made with the carb mounted)...
I was running a Super E on my EVO WideGlide but replaced it with a Mikuni HSR. I'm also running a HSR-42 on my built TC WideGlide...

Yeah, go for the mikuni hsr42. When I was first looking into changing my carb i did a lot of searching around different forums. Most of what I read about s&s carbs were problems with people never being able to get the full throttle range dialed in......so they were a nightmare to tune. But the mikuni had great reviews everywhere i looked, so I jumped on it and got a new one on ebay for 189.00. THe mikuni was a little painstaking to tune to get everything just the way I liked, but well worth the time. The biggest improvement you'll get out of the mikuni is very crisp throttle response. Don't expect any boost in HP though, all the carbs, keihin, mikuni, s&s when properly tuned will produce approximately the same maximum HP.
