Just went through this with my dealer. Even if you just do pipes, it may run lean. Pipes and breather will require re-map. Fuel pack or other type of fual management system can be installed and re-mapped by you. There is a downside to this. Your HD service can no longer plug into the ECM and diagnose issues with aftermarket fuel management systems. Knowing this I let them do the re-map.
to answer your question about if you can do it yourself. You can not remep the system yourself, however you can buy a pcV, thundermax or some other tuner and do it yourself that way. I suggest giving fuelmoto a call.

There plug & play why can't you just unplug and plug back into the ECM and then diagnose?
Told my dealer that I had ripped the packing and baffles from my stock exhaust and installed an Arlen Ness Big Sucker. The service guy at my local HD said it would be fine without re-map or FI management.

And when you burn a hole on the top of your pistons from running lean, will they honor your warranty? Get it in writing.

i'm sure that it'd be fine...to them...because then they would not ever have to work on yer bike under the factory warranty, because you wouldn't have one afterwards
