The way the filter sits in there,what is the best way to do this without oil all over the place

There is actually a "funnel type" thing sold by JP Cycle that sits around the filter during removal. I never tried it, but saw it in the catalog.
The filter I can deal with, using cardboard, but the little freaking hose and hose clamp on the bottom is a damn joke! I can't believe that this was actually designed by some engineers! It looks like somthing a 10 yr old would design! It is a pain in the butt every time!
Try taking a punch or old phillips screwdriver and punch holes in the end of the filter at the 6 and 12 o'clock positions. Let the oil drain from the filter before removing it and you'll have alot less mess.

Yup. That's EXACTLY how I go about it. Once you do that, you can usually just take a piece of cardboard, or other heavy type paper (empty 12 pack carton works good) and catch the remaining oil when you remove the filter. You might want to place a shop rag over the filter when you punch the holes. They will sometimes spit oil out at ya during the process.
I just stuck the drain pan under it and let it run....leave the drain pan and spray it with brake cleaner. The pan will catch everything. Cleans it first time, every time, with no effort...
