Default how hot is too hot?

can anybody tell what engine temp. my 03/1200 should be running at? did a search couldn't find what i was looking for.
i put a new set of basani pipes on and they are turning yellow and blue about a foot down from the exhaust port. i would expect a little up near the port . but, i think a foot is along way down the pipe to be turning?
i got a laser temp. gauge today but didn't have a chance to use it. thanks

Pipes turning like that sounds more like a improperly tuned carb than a heat issue.

yeah, engine heat is usually measured in oil temperature - which really depends on OAT, engine speed, etc. As sportypig notes this sounds like a fuel/air mixture issue.

What type of oil are you running? That sounds about right for SoCal, running the freeway, and using conventional oil/ low weight oil. You could get the temps to drop a little using a synthentic or heavier oil.
