Finally found what it'd take to get me comfortable on a sporty... is this possible?

The swale the stock seat has on my 2008 Roadster was uncomfortable for me so I had C&C fill it in to flatten the profile of the front part of the seat. This raised the seat height 1 to 1.5" and took the cramp out of my knees. I don't feel as though I have lost the "low bike" feel, the profile change didn't radically alter the asthetics and handling doesn't seem to have been effected.

I regularly scrape jiffy stand, pegs, and exhaust. I know they're lower, so I can't see how they wouldn't, and It's a lot harder to draw your leg up for more clearance with them up there.
I also can't lean off the bike nearly as well, if at all, with forwards. Yes, I get off the bike in the mountains... what can I say, I ride hard?

I would do either the forwards, or the highway pegs. I'm 6'3" and know how you feel. I had mids on there and my legs would cramp up in now time at all. Put the forwards on and they're great. Never had any problems cornering, and I almost feel like I have more control. If you just really don't want the forwards, get the highway, will put you in a more comfortable riding position for those long trips.
