It's hard to see from the pictures, but if you're around 190 and the shocks are on position 1 then moving them would definitely help. Better longer shocks are the best way to go, but increasing the preload should at least make it significantly better. Check the manual, but you should probably be in the middle at your weight. 3 out of 5 if they are the 5 position version. You should theoretically use the correct tool for the job, but I've never had good luck. I've always just grabbed a big pair of channelocks or vise grips and wrapped a rag around it so it doesn't get scratched up.

Ohlin makes shocks for Sportsters in the 12 - 14 inch ranges. Check their offerings.

Yes, it's pretty easy to move the adjuster.
