Got her started
So got the sporty that sat for 5 years started today, while revving the motor a little the dipstick blew out of the oil tank, then after we shut the bike off the oil tank filled up and over flowed? I would love some ideas of why, I have checked the lines for kinks and the crankcase breather bolts.

These bikes "wet sump", meaning when they have been sat for a while all or some of the oil migrates to the crankcase.
You probably added oil to the bike thinking the tank was low and when you fired it up all the oil in the crankcase came back to the tank.
Just drain some out until oil level is just showing on the dipstick, fire it up and get it warm and check the level again. Add oil until it shows to about halfway on the stick.
Never check level without warming the bike first.

Checking oil on these bikes is a bit of a problem. The oil should scavenge from the crankcase to the oil tank after the engine has been run for only a short while. The problem with doing that is it tends to create condensation that pollutes the oil.
Running the engine until it is to temperature that stops condensation forming takes time.
Maybe with the warmer weather it is not a problem to run the engine for a short while. Maybe if you run the engine in order to check the oil but then after doing that you go for a ride the condensation won't be a problem.
