Default Carb help

I recently bought a 883 wich has a conversion kit , not forsure how big they put on it , but it has a mikuni carb on it so i beleive the got a carb big enough for it but it will cruise and run fine until you hammer the throttle and then it falls on its face like it is drowning or maybe no fuel ?? Carb doesnt seem like it needs rebuilt and I cleaned it worked fine again was cruising and then went to get on the throttle and game over, also does it matter if its a 1200 1255 0r 1275 ? Or should one carb work for all three of those before needing a bigger carb
