Ok so we have figured out that I have a stock air cleaner but an aftermarket atmosphere breather. Since it has a 1200cc conversion it has a jet kit in it just don't know what size.
So all I need to know now is if I get the arlen Ness heavy breather how much bigger of a jet will I need. Or will the one that's in it because of the 1200 conversion be enough fuel?

Not so fast. Unless you are prepared to get rid of your external breather, you need to make sure that the arlen ness will work with your external breather.

Take the chrome cover off and check what's behind it. I'm not convinced you're right! The stock airbox/housing is a large plastic moulding, however most aftermarket air filters replace that with a simple metal backplate. Many owners will use the stock cover. Let us know what you find. You can see what the stock parts look like here. As for jets, the PO may have done that correctly. How does the bike ride?

Bike rides fine with tons of power. I do get a little popping if I am in high rpm and let off the gas completely. If I rip through a gear and let the rpm come back down

You're not going to get better performance from some ugly air filter over the K&N you have without a heavily modified engine (more heavy than that). Is it clean and properly oiled?
It sounds like you need to go through a dialing in process which would include inspecting the spark plugs to detect lean (more likely) or rich condition (less likely), pull out the carb to see what's in there now for main/pilot jets, check current mix level (number of turns from lightly set) and then determine from there.
You may need as little as a tweak from the mix setting or a minor change in jets. A little popping is not a terrible concern and can be remedied easily.
