Just got back 2 weeks ago from doing the Tail of the Dragon and the Cherohala Pkwy. If you have time don't miss the Blue Ridge Pkwy from Cherokee to Asheville also. You can get there by taking 28 east out of Deals Gap, also a nice ride. Your dates Mon/Tues are good times to run the Dragon, less traffic, but you'll be getting there at the start of tourist season (vacation traffic). If you like good BBQ check out Sweetwater BBQ in Robbinsville at the south end of the Dragon.

Just got back from the Dragon myself last Sunday. The Dragon is a crazy road, but a lot of fun. If your not good at cornering yet, be careful. Well, be careful anyway.
Did the Cherohala, Blue Ridge Parkway, Foothills Parkway, the park into Cherokee & Cades Cove. My favorite though, is Highway 360 in Tellico Plains heading towards Maryville. Beautiful smooth road withlots of long sweepers. We were doing these curves at 60 mph and it was a blast. You gotta' ride this road if you are in the area.

Hey there, I might could ride over and meet ya on those dates. I try to ride over and spend a couple of days riding over there about every 6 weeks or so. I'm planning to head over that way Sunday. Don't under estimate the curves on the Cheroloha Skyway. Statistically, it's a more dangerous road that the Dragon, but it's a beautiful ride. Also if you have time, ride the Foothills Parkway, you can catch it just a couple of miles North of the Dragon.
Everyone should make a date with the Dragon. It's the most fun you'll ever have with your clothes on.
Beware of your Speed on any of the Roads that are in a National Park. If you get a speeding ticket in a National Park, it's a Federal Offense. And the fines are usually in the $300 - $500 range. They especially patrol the Foothills Parkway. If you meet a biker coming the other way, and he pats the top of his head, that's a sign of radar ahead.
And I second the nomination of Sweetwater BBQ in Robinsville for a "don't miss" place to eat while on a bike ride.
