There was a thread on this same topic posted a couple of days ago, so you might want to do a 'search' and see what you can find.
But the bottom line is that any bike could be changed over from carb'd to EFI, but it would would be pretty expensive when all was said and done.
Just my opinion, but if your wife wants to go with EFI it might make more sense to just trade her '06 for a '07 and be done with it. That way you would get a new bike (with warranty) that is already factory setup with EFI, so you wouldn't have to worry about any of the possible carb to EFI problems that could run into more time and money.
There are a number of dealers that are reducing their current inventory, and are selling 2007 models below MSRP.
