I don't really know much about trannies other than my college roommate thought he was one and started wearing a bra. He was 24 and looked like modern day Jon Lovitz. Anyhow, I have been pouring oil in the holes and the transmission and the bike keeps going without a hitch. I just watch a YouTube video and they tell me what to do. I know the twinkies have 3 holes and sportster shave 2. My roommate wished he had three holes like a Twinkie.

I have been putting 4qts in mine. Are you guys draining from the tube and the plug underneath? There are 2 connected sumps in a Sportster (tranny and engine) and only draining one hole does not change all of the oil. At then end of a change I will let a little oil out of the tube to clear any air and then good to go. I tried putting in only 3 but it wasn't even up to the dipstick.

The primary/transmission is not connected to the engine for oil. You could pour 15 quarts of oil (if it would fit) and the oil level on the dipstick would not go up one bit. The dipstick only measures the amount of oil for the engine.
As mentioned 1-quart for the primary and transmission and 2.5-2.75 quarts for the engine is about right.
I never put 3 quarts of oil in for the engine as I keep the oil level in my oil tank at halfway between the add oil line and full line. If you put in 3 quarts of engine oil, you are probably near or at the full line on the dipstick, so for you 4 quarts is correct.
