there's a lot of guys on here with good aftermarket seats so I'm sure they will chime in- not too many choices for the Breakout though as far as ready-made.
Excuse the ignorance, but who do you go through/what do you ask for in this endeavor?

My rear PM wheel is done and is being shipped out to me today. So I should hopefully have it on by end of next week.

Look for a local auto upholstery shop, sometimes it helps to use Yelp for reviews if you don't already know a good place. they have different materials to choose from for coverings, and different types of seat foams. the gel foam is typically the best. you can take the bike down there and discuss what you want done to the seat- make it lower, have it push forward a bit, custom stitching on seat cover, etc.

Work like this runs on average anywhere from $100 to $250. sometimes it pays to shop around a bit if there are several upholstery shops in your area.

+1 on the local upholsterer option.

If you are interested in how I got my stock seat modified to make a solo seat out of it, read my Custom Solo Seat Thread

yeh it's a much smaller niche market so the cost per unit is going to be a lot higher. BTW I just got a call from the dealer where I bought the wheel, and they told me they screwed up on the price and sold it to me for $200 below their actual cost. they were cool and just ate it, so I guess I did get a pretty good deal. but hell, yes these wheels are not cheap!
