I can relate: 6'6", 275lbs, 37" inseam, size 14 boot. Tough to find a bike that fits!
I'll second what has been said about the Harley Goodies extensions. I was skeptical since they didn't move my feet forward, but dang, they worked great! I also put an extended shift lever and extended brake pedal on, and that allowed me to leave my crash bars and controls in the original placement. Something else I did was have my seat re-done - foam sculpted and dished out, and puts me right in the angle at the frame/fender. Final thing I did was add 8" risers and 36" knuckle bars. All these mods are easily done at home, and don't cost a ton of $$ - nor do they extensively modify the bike's frame and handling geometry.
FWIW, I have a '99 HS, but the mechanics of that to the Fatboy for a tall fella should be about the same.

I'm 6'4" w 36" inseam - long legged girl haha I had Kury Mark IVs, but I didn't like the way they looked on my fatty so I swapped them for the HD Highway bar. Frankly - I don't use it much anyways. My floorboards are still in the stock position. Let's see... I have 16" Chubby Wild1s and a custom seat - Lepera Everything feels great except I wish the floorboards were slightly away from the bike - I may need to invest in the HG extensions.
