oil cooler vs oil pressure?

Nope, not true
The oil cooler is at the "end" of the oil cycle through the engine just before the oil filter. The oil pump will pressurize the whole circuit regardless off the oil cooler or not. Only thing you have to do is add a bit more oil to compensate for the volume in the oil cooler. (not that much anyway)
If this "myth" of lowering the oil pressure would be true, why would HD actually have one in their catalog.
Can't recommend one. I have the one from HD, only one available here in sub tropical Malaysia. Been on the bike for the past 3 years, no problems what so ever with oil pressure. Bike has about 22,000 KM (±16,000 miles I guess) on it at the moment.

Completely agree with Rakthi and will add that any oil cooler is better than none at all. I do however recommend a Jagg. www.jagg.com
