We have both. An 00 carbureted and an 03 FI. Both run flawlessly.
The 03 is easier to start when cold (basically hit the button)

Carbureted sounds better. Idles better (03 sounds like a loud air compressor)

Considerable heat difference. FI has 20-40 deg higher oil temps. Very noticable on a hot day.

It will sound better, have taller gears and be cheaper to work on. And harder to start on cold mornings.

Taller gears? Are EFI bikes geared different than carbed bikes of the same year?

I have an '03 carbed Deuce and an '03 EFI Electraglide Classic.
The classic has a lot of work done to it, but the Deuce with Woods cams and a Mikuni carb, has to be the happiest bike I've ever ridden. Warming up isn't that big a deal, and when it's warm, touch the button and it doesn't make one revolution and it's idling. Just keep some fuel additive in it if you don't ride it much. I ride mine every couple months, I use Amsoil Quickshot no issues. FWIW.
I actually rode the Deuce today!

I prefer the idea of keep it simple, and when it comes to FI on the new bikes, those are NOT simple. I'll stick with my carb - gives'er some personality ;-)

carbs are the best! I hated the complex high idling efi.

IMO carburetor bikes have a louder and different sound. I have an carbed 06, the last year HD produced carbed bikes.
