Most of these things are non-issue to begin with, all 00-03 softails had a rear wheel offset, never affected anything.
As a new buyer you you may have a different question to ask.. mostly 07 Engine vs prior engines (the 07 is bigger, better valve train ,cam tensioners and oil pump etc.).
From a cosmetic point of view , look at new magazines, nobody have fat tires anymore, it is way gone, it is all about skinny tires so suddenly those 150 rear ends are popular again, and those 200 rear ends of the 07 and up look mmmm.. a bit out of fasion but that is VERY SUBJECTIVE.
The Heritage and Deluxe will give you both the skinny tires and the good fat front with the new Engine.
It is all about money and options , enjoy the shopping it is super fun
