I've ridden a few thousand miles on Southern California freeways on my 2004 Fatboy with the stock wheels and never had any problem with wind push from passing big rigs. I recently switched to open custom wheels and didn't notice any difference at all. I would say it's a non issue. Go for the Fatboy.

The only time I have had a problem was a 50MPH cross wind in South Dakota pass in a Semi at 85 with a wind shield.
As I cleared the Semi the side pressure caused a wobble that got my attention.
I threw the wind shield away an never happened again.
I think the up right riding possition is more a factor than the wheel myth.
You get used to it.
All wheels act as a solid even spokes over 35MPH someone on here had wind tunnel data a few years ago that proved it.

i have owned two Fatboys and countless other spoked bikes and never noticed the difference. Fatboy is the way to go if you like the looks.
Floorboards compromise the ground clearance a lot, but i love the feel and the look. +1 on jbg's advice to leave them on a while and see how you get on.
