I used Milwaukee Twins at 35 1/2 wide and 1 3/4 risers.38 w bars were uncomfortable for me.

My 2005 SE Fat Boy came with the 1-1/4" narrow beach bars. They are very comfortable. Depending on your arm length, the 36" may fit you better then the 38" or vise versa.
Best method is to go to a large motorcycle gathering and ask if you can sit on bikes that have handlebars that you are interested in.
My local dealership has a mock frame where you can put different seats and handlebars on to see how they feel.
The problem with doing either of the above is if the seat isn't the same as yours you wont approach the handlebars from the same height and/or distance.

Some owners rig a mock up handlebar with coat hangers or material that can be shaped close enough to give you an idea how the bars will fit you.

Its a hassle changing bars so make sure you get what you want the first time.

Here are some klockwerks menteles. They are 37 1/2" 5' rise 10 1/2" pullback. Best part I was able to use stock cables on mine. Since these were taken I have also removed my idle cable or 2nd throttle cable really cleaned things up on the bars.
