I went with a set of PM 18" wheels 18 x 3.5 with a Metzler 140/70 on the front and 18" x 4 1/2" on the back with a Metzler 160/60 -- their tires are low profile (70mm and 60mm) so they are about the same as stock. The new tires make it feel like a whole different bike - rides better, no more tracking lines on the road. Be sure to get a new pulley and discs, no mods necessary just a smaller spacer for the front wheel.

When going to larger tires, the only thing that changes is the patch of rubber on the ground. Big tires have more of a square patch and small narrow tires are more rectangle. When going bigger keep in mind if your adding weight you may affect performance - those 250/300mm tires suck up lots of HP and still have the same contact area as a 140.
