Now almost 5hp & more than 7 ftlbs is a lot for that, more restictive than I would have thought. I am taking out my quiet baffles and going to use thunder city, I'll see how it works out in about a month
Looks like you pretty much know where your problem is coming from now, those quiet baffles pretty much killed it! The dyno tune was done correctly but the parts selected just were not up to the task.

more back pressure more TQ, less HP. there is a sweet spot that most pipe builders try to get. There is a reason they call the short open pipe drag pipes. it is because you want HP and don't care about TQ. run high rpm. but for most people they need the TQ and the HP. I can tell I lost TQ with my hooker pipes because I cant cruise in 6th gear at 55. I now need to be going 65 but I can feel the HP when I get the rpm up
In conclusion, after getting no satisfaction from either the vendor (Motosport) who I purchased the pipes from nor the manufacturer (Freedom Performance) who I purchased the quiet baffles from, I disputed the charges thru my credit card company and received credit for both. I then purchased V&H Softail Duals with fishtail tips and took it back for dyno tuning with the following results:
They sold you what you asked for and because you did zero research before hand they have to eat it!

Well then I guess that I'm just a **** head then. No other manufacturer's quiet baffles are so restrictive as to drop the power lower than stock and create so much heat because of the restriction that the mufflers turn gold. Not to mention that they are advertised as being fully heat shielded and in fact are not. I wish that I had your kind of $.
