That's a tough question as my bike like many has been work in progress for 7yrs now since it was new. I'd have to say though one of the most functional most used things was getting my Boss detachable bags !
It's a little thing, but I got rid of those fricken Mickey Mouse mirrors and replaced them with a small custom from Jaybrake. It's a cleaner look, does the job and I get a ton of compliments.

Bags, pipes, new carb, ignition module, and coil, turn signal mirrors, iso grips, memphis shades wind shield, and upgrading my front end thus losing my skinny 21 inch tire and fender and replacing them with a chrome 16 inch thunderstar wheel and a fatboy fender, to name a few.
