Good choice, my 1st harley was an '07 Fat Boy.
I wasn't going to buy anything for it either.
I went in to my Harley shop today to order some Big Radius pipes and told them never, don't ever tell me a total of how much I've spent so far.
I'd have a heart attack.

Congratulations!!! Good choice.
As Poor Boy said, you should really consider going to Stage 1, or aftermarket pipes at the very least, so the wife is most comfortable riding two-up. The pipe placement on these bikes is curious, and very uncomfortable. Aside from that, a sissy bar is pretty mandatory, and passenger footboards are welcomed, at least in this camp... I wanted to be sure my wife was as comfortable as possible so she'd embrace it. It's worked so far... she really does enjoy riding with me.

Thanks for all the nice comments. Wifey doing great. Came out the other side MUCH stronger person. Here are some better pics in full sunlight of new 2008 Fat Boy in Vivid black. Thought about waiting for a Red 2008 fatboy but glad I grabbed up the Black instead... A real head turner.
