I had a 2012 Fatboy. Before i got my life together I was 325lbs and the wife was preggo @ 275. Soooo close to 600? We rode everywhere on that bike. And I had 18 apes. Its just a matter of adjusting. Kind of like having a 10 steering wheel vs a 24 steering wheel. Just takes an adjustment and a little common sense.

Sorry for my ignorant question. What's the heaviest weight the Fatboy can take? I met this Lady that wants to go on a bike ride but she's like Tess Holliday without the tattoos! Approx, 320 Lbs. Will the Fatboy take our total weight? I am 190Lbs. Do I need to adjust the suspension? Please, no fat women jokes. I love chunky. Thank you.

There is a manufacturer's label on one of your front down tubes. It will have the date of manufacture, your VIN, and the gross vehicle weight rating (GVRW). That is supposed to be the max weight of the vehicle and all payload (passengers/cargo).
According to my '03 Heritage softail, you would be overweight by almost 100 pounds.
Here is my label:
Per my label, the GVWR is 1160lbs. I have not actually weighed my bike's "running weight" (weight of the bike with full fluids, minus any passengers/cargo) but the vehicle running weight of my bike is reported to be 738lbs. So the GVWR (1160) minus the running weight (738) leaves my bike with a total payload capacity of 422lbs. You and your girl, minus any cargo, equal 510 lbs. It could be unsafe for you to take her for a ride on my Heritage.
I suspect your softail will be similar. I sincerely doubt it's a 100lb difference.
So, you can find out the bike's limits, know the possible risk, so it's now up to you, to decide how much risk you're willing to take.
If I were you, and decided to take her for a ride, I would make sure the tires are in good condition, within their serviceable life (generally 7 yrs), and inflated to max pressure for max load capacity. In the long term, I might look for tires that would fit the bike with higher load capacity, but that's just one piece of the GVWR puzzle.

I don't think you will be far enough over the weight limit of the bike to matter...but what you really need to check out is the weight limit of the tires...especially the rear...
I betting a blow-out at highway speed with 510 lbs of passengers will not be pretty.
A standard dunlop only has a load index of 67...I would look for something higher...
